The weekends can be extra challenging to stay on track with your health and fitness goals. Don’t let one social gathering sabotage your entire week’s progress!!! This is what I do and it always seems to work out. When I am invited I always ask “What can I bring?” Most likely the host will say “Nothing or just bring yourselves.” That’s when I suggest something and tell them I’m not coming empty handed. My Italian background has taught me to ring the doorbell with my elbows, which means…never go anywhere empty-handed!!! Most people are trying to be nice and find it uncomfortable to ask.
If they actually do take you up on your offer and ask for a specific dish, I always search for a healthy version and make that.
SO…Here’s an idea! If you’re bringing a dish with you, make this beautiful fruit platter! I just made this for the Teacher’s Appreciation Luncheon and it only took me 30 minutes to put together! It’s quick, easy and healthy! Everybody loves some kind of fruit and when you make it look as attractive as this….it will go quickly!!! it’s a great alternative dessert for the kiddos and not to mention….your friends will think you are super talented!!!
Here’s what you’ll need:
Pint of Strawberries
1 Melon or cantaloupe
Wooden skewers (if using for children, cut the points off them.)
Fresh kale for garnish (optional)
Fresh mint sprigs (optional)
Slice the strawberries either in 1/2 or 1/4 depending on size.
Cut the pineapple and melon into 1 inch cubes.
Save the bottom slice of pineapple to make the sun.
Place the fruit on skewers, keeping the same pattern so it looks like rainbow when put together.
This is the order I used: Strawberry, melon, pineapple, red grapes, blueberry and green grapes.
Slice the thick center stem off the kale and create a ring around your plate.
Cut triangle slices into your pineapple ring so that it looks like a sunburst.
Place skewers as shown.
Garnish with fresh mint (optional.)
