The recipes in the Fixate cookbook are….ABSOLUTELY AMAZING!
I gotta be honest with you… I have a hard time finding clean recipes that are quick and easy. Most of them require a pantry of exotic ingredients or are trying way too hard to be super gourmet for my tastes.
These days, I only have time for simple and easy!!!
The recipes in the Fixate cookbook are quick to make and don’t have a crazy laundry list of ingredients. It’s totally worth every penny in my opinion. I have already tried a bunch of these recipes and they’ve all been fantastic. They were even kid and husband approved!!!
Gluten-Free Flour-less Chocolate Chickpea Brownies!
Okay, so here’s the deal! Before you go thinking that just because these are gluten-free, you can eat as many as you like….One brownie is the equivalent of one yellow container. So unless you want to blow your eating plan out of the water, just stick to one brownie per day okay?
~ 1 (15 oz) can of chickpeas/garbanzo beans. Rinsed and drained.
~ 1/4 cup of butter (or extra virgin coconut oil)
~ 2 large eggs
~ 1/2 cup of maple syrup
~ 2 tsp. vanilla extract
~ 1/3 cup of unsweetened cocoa powder
~ 1/2 tsp. baking powder
~ 1 pinch sea salt
~ 1/4 cup of semi-sweet chocolate chips
- Preheat oven to 350 degrees.
- Line a 9×9 inch baking pan with parchment paper and set aside.
- Place chickpeas, butter, eggs, maple syrup, vanilla, cocoa powder, baking powder and salt in a food processor; cover. Blend until smooth.
- Add chocolate chips; mix by hand until blended.
- Evenly spread batter into prepared pan.
- Bake for 25-28 minutes or until a toothpick inserted into the center of brownies comes out clean.
- Cut into squares.
You can slow cut these into heart shapes for Valentines Day and sprinkle with powdered sugar.
I have to say that I was pleasantly surprised at how these came out. I was expecting I thought grainy and bland. Boy, was I wrong! The final product tasted WAY better than expected! Try them out this evening and tell me in the comments below what you think!
